Thai Barbecued Shrimp

These barbecued shrimp have the perfect amount of kick to them, and are great over rice or noodles, or just on their own!

Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 2 teaspoons curry paste
  • 1 pound medium shrimp – peeled and deveined

Steps

  1. In a resealable bag mix together the lemon juice, soy sauce, mustard, garlic, brown sugar and curry paste. Add shrimp place in refrigerator to marinate for 1 hour.
  2. Preheat grill for high heat. Thread the shrimp onto skewers. In a saucepan, boil the marinade for a few minutes. When the grill is hot, lightly oil the grate.
  3. Grill shrimp for 3 minutes per side, or until opaque. Baste occasionally with the marinade.

The Balancing Smoothie Drinks

To refill your energy levels, Nutrition is key. This smoothie contains Maca, Cacao, Chia and Purple corn, which is an upgraded version of the “Chicha Morada”, the refreshing drink the Andean people used to drink. It promotes healthy blood sugar levels, blood flow, boost cardiac health, increases hormonal balance, stamina and an antioxidant powerhouse!

Ingredients

3 bananas
1 cup oat milk, water, almond milk or soy milk
2 tbsp Chia
1 tbsp raw Cacao
1 tbsp Purple corn
1 tbsp Maca

Instructions

In a blender, mix until smooth!

Pad Thai with Kelp Noodles

Although traditional peanut sauce can be complicated to make, my version is pared down to the basics. Because raw peanut butter doesn't taste very good, I use almond butter, seasoned with coconut oil, lemon, jalapeno, and coriander. Just blend and toss.


Ingredients

sauce:
1/2 c almond butter
1 cup coconut oil
1/4 cup braggs
1/2 cup lemon juice (please prepare juice for me from fresh lemons)
2 Tablespoons jalapeno pepper, fresh
2 teaspoon ground coriander
1 1/2 cup filtered water


noodles:
1/2 cup fresh basil
2 cup shredded cabbage (pre shredding will be helpful)
4 x 12 oz packages kelp noodles

Instructions

Blend all sauce ingredients and toss with noodle ingredients.
